Chaotic Meal #2
Lately when I don’t feel like cooking, (but I know that I need to eat) I’ve been heating up this frozen Mexican meal from H-E-B:
I love enchiladas, so you can say this is one of the many “safe meals” I keep on rotation.
Here’s where the nutrition comes from:
• Protein: the chicken & the cheese in the enchiladas
• Carbs: tortillas & rice
• Veggie (aka carbs): 🥬 ,🍅, radish
• Fats: Cilantro Crema Lime dressing, Cotija cheese, & the cheese on the enchiladas
What makes this meal chaotic is that it comes together pretty quickly. While the meal is heating, I make a little side salad to add veggies, fiber & more filling nutrition to my plate.
I always have greens ready to wash & chop up. It’s my easiest way to get veggies in when I don’t really feel like cooking or eating. It’s easy to forget that leaves are also veggies 🤪
Anyways, this meal is also pretty low on calories, it’ll help you stay fed without too much work and I hope you’ll be pleasantly surprised with how good it tastes. Bonus points: you’ll have some new energy to keep tackling the day instead of dragging or forcing yourself through the day.
